What fun to be able to indulge in horror, blood and all things spooky at Halloween. Being a compassionate eater doesn’t mean missing out on the gorefest. The real nightmare used to be when all red food colouring contained crushed beetles (no kidding! Check out cochineal). Now, plant and flower based colours are available and mean vegans can cook up their own body part themed food, complete with veins and dripping blood!
This makes 8 large squashy marshmallow brains but I cut the recipe in half (not enough marshmallows!) and made more smaller brains.
440g of vegan marshmallows (I used freedom confectionary vanilla mallows!) no gory gelatine involved!
7 cups of rice crispies
2 Tsp of coconut oil
Red food coloring (6 drops)
Red gel “blood”
1⁄4 cup syrup of choice (I used fruit syrup)
1⁄4 cup cold water
3 -4 teaspoons cornstarch (or more if needed for desired consistency)
1⁄2 teaspoon vanilla flavour
Red food colouring
Melt coconut oil in a pot over medium low heat. Add marshmallows and keep stirring until they have completely melted.
Add red food colouring and mix and then the rice crispies. Mix well and make sure they are all covered in the the gooey marshmallows.
When it has cools a little, grab a handful – however big you want your brains – and make into a ball. Squash down onto parchment paper and create a little crevis down the middle in of the brain and the two hemispheres of the of the brain have been created!
Either bring to a boil on the heat or microwave for a two minutes until the liquid is clear.
Once cool, pipe the veins onto the brains!
